Oh YES!!! Cocktails made with bacon (and other meats)

I'm going to have to schedule another trip to Chicago just to sample all these.

There's a really nice steakhouse in Miami, in Southbeach, that has a bar where you saddle up and they have huge thick cut bacon strips and other meats on sticks instead of nuts. That was a really nice move, I thought. Can't remember the name of the place ... has a number in the name ...

Cooked, I hope?

Yes. Smoked.

Delicious, then. There's a restaurant here in DC that sells completely raw beef. Does *not* sound appetizing.

If it's good beef, it sounds appetizing to me. You wouldn't want raw oxtail or something, but a nice bit of steak tartare is a different matter.

I've never done tartare. I love tataki, but I'm oogie about the combination of ground and raw.

Agreed. I can go for Carpaccio, but I never understood the appeal of uncooked meatloaf served at a temperature you can't taste the meat.

I would definitely eat the raw beef. When I was a kid, and my mom was making sloppy Joes or something, I'd always hook a little piece of raw or mostly raw ground beef and eat it. I'd occasionally eat raw hamburger today if I wasn't afraid of the health risks now.

I did have some kind of steak tartare appetizer once. It tasted different from what I expected -- didn't really taste raw. It was good, though.
