A subcategory for things you can make in 10 minutes or less. An example I use:
Poach two eggs: 5 min and a hair.
Make a packet of Uncle Ben's instant flavored rice (any will do, I use Spanish or Santa Fe): 1 min 30 sec
Grab 2 slices of prosciutto (sp?).
In a bowl layer rice, one slice of prosciutto, more rice, the other slice, and top with poached eggs. Season with italian seasoning and ground black pepper.
Done. This is a low rent version of one of the best tapas I've ever had, at this little place in Costa del Sol Spain. They used the crazy good Iberian ham - which is, by the way, the best pork product ever devised but difficult to find.

10 Minute dish:
1 pkg Ramen noodles
1 handful snow peas
1 large carrot
10 pealed and deveined raw frozen shrimp (15-20 count)
1 cup water
3 Oz vermouth
1 dash Soy Sauce
Julienne the carrot. Mix water, vermouth, soy sauce, and just one pinch of seasonings from noodle flavor packet. Divide into two soup bowls. Divide noodles into bowls. Add layer of peas and layer of carrots. Top with five shrimp each. Cover with plastic wrap (or other microwavable lid) and microwave on high for three minutes, let stand two minutes (add time if shrimp is not done)

My wife likes my "Curried Chicken and Rice".
As an oven dish this is dumb simple to cook but not for those who need to eat NOW!!
1C long grain or basamati rice uncooked*
1can cream of mushroom soup
water (or chicken stock) to equal 2 cups total liquid*
4 thawed boneless skinless chicken breasts, all the same size
Curry Row (Powder)
Salt
Additions as taste demands (pineapple chunks, raisins, slivered almonds, etc.)
Preheat oven to 350F.
In a large measuring cup, mix soup and water together (total of two cups liquid) and stir in 1tsp curry powder (more if you know you like it) and 1/4tsp salt. Place rice in the bottom of a 9X9x2 or similar sized pan large enough for the chicken. Pour the mushroom soup over the rice and stir to combine. Place the chicken breasts on top of the rice leaving at least .5in between them. Dust with salt and curry powder. Cover with foil and bake for 45-1hr or until the chicken reads 170F and the rice has absorbed enough water to be done. Allow to rest 5 minutes covered before serving.
*If you want more rice, up the rice and water to maintain a 1:2 rice:liquid ratio. If in doubt, over do the water and let steam vent a couple of minutes before serving, better than crunchy rice.

I've been doing a lot of pseudocasseroles like that recently.
If you have a problem with leftovers getting too crunchy, you can try medium grain rice. I like the slivered almond idea. It'll add some texture. Raisins would also be a good idea for this kind of dish.
I've also found that if you take off the foil about 10 minutes before the end of baking and sprinkle on a moderate amount of cheese (preferably one that melts well, but doesn't get truly runny - monterrey jack is good, as is cheddar if it matches the taste of the dish) this adds an uber-tasty cheesy crusty goodness to the dish. Might not be right for something asiany like curry, though.

Best heart attack inducing thang:
12" skillet
instant pancake mix
2 eggs
butter
4 pieces of thick bacon, cooked kind of floppy (pre-cooked or cook yourself)
hot sauce (preferably something kind of fruitish, like Bill's Strawberry Habernero sauce)
ketchup
4 slices of American cheese
cook the bacon (if not pre-cooked) and then put the heat on that pan really low, crack the eggs and let them fry @ looooooow heat while you deal w/ making the pancake/pan-sweet-tortilla as I call it. When you flip the pancake to cook the other side, put the cheese on the pancake so it starts to melt. When the pancake's done, put it cheese-side up and place the eggs (hopefully still a little runny in the yolk) and bacon across the pancake in whatever way you choose. Roll up the huge pancake into a rollade, put a toothpick in the middle, and slice it into little circular pieces and serve.
EXTRA: put the ketchup and hot sauce in before you roll it up if everyone likes that, if not just have it on the side.
